How To Make Drop Biscuits From Scratch
Start by whisking together 2 cups of flour, 1 tablespoon of baking powder and 1 ¼ teaspoon of kosher salt in a large mixing bowl.
Next, cut 1 stick of cold butter into small cubes and add it into the dry ingredients. Use your hands, a fork, or a pastry cutter to combine the butter into the dry ingredients until the dough resembles coarse meal.
Finally, add ¾ cup of milk and stir until just combined. If needed, add up to 1 cup of milk if the dough isn't coming together. It should be a thick batter and slightly sticky.
How To Make Chicken Pot Pie Filling

First, prep your ingredients. This includes slicing 4 chicken breasts or thighs into bite size chunks as well as dicing ½ of an onion and ½ cup of celery.


Second, heat a large cast iron skillet over medium heat and melt about a tablespoon of butter. Once the butter is sizzling, add chicken chunks into the pan along with salt, pepper, thyme, parsley, and oregano. Cook until browned but not completely cooked through. Remove the chicken and set it on a paper towel lined plate to drain excess grease.

To the same skillet, add another tablespoon of butter along with the ½ diced onion. Cook the onion until translucent and fragrant. Next, add in 2 minced garlic cloves. Let this cook for another 30 seconds.

Once the veggies have softened, coat them in 2-3 tablespoons of flour and stir until the flour has dissolved. Flour will be the thickening agent for the chicken pie gravy filling. Add 2 cups of chicken broth to the skillet and stir until combined.

Finally, stir back in the chicken chunks to complete the chicken pie filling.

You can choose to bake the chicken pie recipe with biscuits directly in the cast iron skillet. Or, transfer the chicken filling into a baking dish. Top with 6-9 drop biscuits (this depends on how large you make your biscuits and how large your baking dish is).

Chicken Pie Filling
- 4 chicken breasts cut into bite size chunks
- 1 12 oz pack of frozen peas and carrot mix
- ½ yellow onion diced
- ½ cup celery chopped
- 2-3 tbs flour
- 1 teaspoon thyme
- 1 teaspoon parsley
- ½ teaspoon oregano
- salt and pepper to taste
- 2 cloves of garlic minced
- 2 tbs butter for cooking
- 2 cups chicken broth (store bought or homemade)
Drop Biscuits
- 2 cups all purpose flours
- 1 tbs baking powder
- 1 ¼ teaspoon kosher salt
- 1 stick cold unsalted butter cut into small chunks
- 3 ¼ cup milk
Instructions
For the filling
- Melt 1 tbs butter in a cast iron skillet over medium heat. Add bite size chicken pieces into the pan, sprinkle with salt to taste, pepper to taste, 1 teaspoon thyme, 1 teaspoon parsley, and ½ teaspoon oregano. Stir to combine and cook until browned but not completely cooked through, about 7 minutes.
- Remove chicken from the pan and set aside. To the same skillet, add another tablespoon of butter along with the diced onion. Cook until translucent and fragrant, about 2 minutes. Add in 2 cloves of minced garlic. Cook another 30 seconds.
- Add in 1 package of frozen peas and carrots and ½ cup chopped celery. Stir to combine and cook for 5-7 minutes until softened.
- Coat veggies in 2-3 tbs of flour and stir until dissolved. Add 2 cups of chicken broth and stir to combine.
- Turn the heat down to low and allow to simmer until thickened. If the mixture is still runny and not thick enough, continue to add 1 tbs of flour at a time until it reaches a very thick consistency. It should resemble a very thick gravy. Once thickened, add the chicken back in.
- Transfer into a baking pan. Top with 6-9 biscuit using the drop biscuit batter. Bake at 375 for 30-40 minutes, until the filling is bubbly and the biscuits are golden brown.
For the drop biscuits
