Strawberry Rhubarb Crisp
This strawberry rhubarb crisp has the combination of sweet and slightly tart. It is a refreshing and light summer treat. This dessert comes together quickly and easily and will be something the whole family loves. Enjoy it with ice cream, whipped cream, or a cool glass of milk!
Ingredients
For the Filling
- 1-quart strawberries, halved
- 2 cups rhubarb, chopped
- ½ cup granulated sugar
- 4 Tablespoons all-purpose flour
For the Topping
- ¼ cup brown sugar
- ¼ cup granulated sugar
- ½ cup butter, cold and cubed
- 1 cup oats
- ½ cup all purpose flour
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- To start, prepare the strawberries and rhubarb by washing them thoroughly. Then, remove the stems from the strawberries and cut them in half. For the rhubarb, remove the ends and chop into about ½-inch pieces.
- Place the prepared strawberries and rhubarb into a medium sized bowl and add in the ½ cup of granulated sugar and 4 tablespoons of all-purpose. Toss until fully combined. Place into an oven safe baking dish and set aside.
- Next, make the topping by adding the ¼ cup brown sugar, ¼ cup granulated sugar, 1 cup oats, ½ cup all-purpose flour, and ½ cup cold and cubed butter. Use the back of a fork to break the cold butter into the other ingredients until the mixture looks crumbly. Sprinkle the mixture evenly on top of the filling.
- Bake the crisp for 25 to 30 minutes or until the top is looking golden and the filling is bubbling up the sides of the pan.
- Allow to cool for 15 minutes or so before serving so the crisp can continue to thicken. Enjoy!

How to Make Strawberry Rhubarb Crisp Step-by-Step
Step 1: Prep
To start, prepare the strawberries and the rhubarb. This looks like washing the strawberries and rhubarb thoroughly, removing the stems from the strawberries, and halving them. For the rhubarb, simply chop it into about half inch pieces.
Step 2: Assemble filling

Once the strawberries and rhubarb are prepared, place them into a medium sized bowl. Add in the granulated sugar and the flour and toss until evenly distributed and combined. Pour into an oven safe baking dish. Set aside.
Step 3: Crisp Topping

To make the crisp topping, add in the brown sugar, granulated sugar, oats, flour, and cold and cubed butter. Using a fork, mash the butter into the other ingredients until the mixture looks crumbly. Sprinkle evenly on top of filling.

If there was a fruit that makes me know that we are in the midst of Summer, it would be strawberries! This strawberry rhubarb crisp is the perfect Summery dessert. Strawberries of course have a refreshing sweetness to them. However, rhubarb has a bitter hint to it. The two complement each other so well.
In the sourdough strawberry shortcake post here at Brick House on Green, I mentioned that I went strawberry picking with a friend at a local orchard. We went two days in a row, and I picked a total of 19 pounds of strawberries! I gave some away to friends and family, baked with a good bit, snacked on some, and froze two bags. The only downside of freezing fresh fruit is that when they thaw, they have a sogginess to them. Which is why they are perfect to bake with. No one will know they were once frozen!
The recipe for this post has been on my mind for quite some time now. Although, the other day I was at my grandmother's house with a few other women in my family and the most delicious strawberry rhubarb pie was made. I could not believe how delicious it was and how the flavored just paired together so beautifully. This recipe is actually inspired by my great grandmother.
