Learn how to make a simple and delicious crockpot beef stew. Made with stew meat, potatoes, carrots, celery and more! This crockpot meal is a great way to bring comfort and nourishment to your family.

Lately, my Pinterest searches have consisted of "crockpot meals." In my busy season of mom life, I am always looking for a way to speed up dinner yet have it be delicious and nutritious. This crockpot beef stew checks all those boxes.
When I think of comfort in a dish, a stew comes to mind. With chilly days still in the mix of things, a stew is exactly what my body craves. It is hearty and full of rich flavor yet nutrient dense and high in protein.
This crockpot beef stew is set to low and simmers away all day. The result is perfectly pull apart beef with tender veggies. This is a great dish to finish off a busy day.
Crockpot Beef Stew Step-by-Step
To start, cut your stew meat into 1-inch cubes and coat it in the flour.

Heat a medium sized cast iron on medium heat and add in olive oil. In batches, sear the stew meat on all sides just enough to get a brown sear. About 2-3 minutes per side.

Place the seared meat in the bottom of the crockpot.
To the top of meat, add in the rest of the ingredients. This includes the chopped potatoes, sliced carrots and celery, and diced onion. As well as the seasonings - garlic, salt, pepper, Italian seasoning, and a bay leaf.

Finish off everything with the beef broth as well as the bit of Worcestershire sauce.

Allow the beef stew to cook on low for 6 to 8 hours or on high for 3 to 5 hours. Check on it every so often as you want your veggies to be just fork tender and your meat to easily fall apart.
Serve as desired and enjoy!
Tips
- Don't chop your veggies too small as you don't want them to get mushy.
- When choosing your meat, keep in mind a higher fat meat will lead to a greasier seeming broth.
- Top with fresh parsley for extra freshness and flavor.
- Cooking the stew on low all day will lead to the most flavor.
- Searing the meat beforehand is optionally. However, it does lead to a more flavorful stew.
- If you prefer a thicker stew, you can add in a cornstarch (or flour) and water slurry.
