Why Busy Moms Need This Recipe
Dinner is done in less than 40 minutes. As a busy mom, I know you don't have time to spend hours cooking dinner. That's why this recipe is so great. It comes together quickly and tastes delicious.
A ground beef taco skillet is high protein. Protein is packed into this simple dinner recipe with ground beef and black beans. Plus, you can top it with some plain greek yogurt (trust me, it tastes like sour cream) for a few extra grams of protein.
Cleaning up the dinner mess will be so easy! Since this recipe is made entirely in one pan, that means only one pan will need cleaned after cooking. I LOVE when there's so few dishes to clean up after a meal!
It's freezer friendly. You can freeze large batches of this, or leftovers, in gallon bags for the future. Utilize those bags for a quick and easy recipe on a busy weeknight. Ground beef taco skillet would also make the perfect filling in a homemade sourdough tortilla!
Kids love it. My toddlers love this recipe! My 1 year old can easily pick out the black beans and diced tomatoes, her favorite part.
Ingredients You'll Need

Black beans - Use canned black beans and make sure you rinse them!
Canned diced tomatoes
Ground beef
White rice - Basmati or jasmine rice will work. For a healthier option you can use brown rice. You'll just need to cook it longer.
Chicken broth - Beef broth or water will also work.
Yellow onion
Green pepper
Corn - Canned, fresh cut off the cob, or frozen!
Garlic
Ground cumin
Paprika
Shredded cheddar cheese - Totally optional as it's only for serving but it adds so much flavor in my opinion!
Salt and pepper

Tools You May Need
Spatula
Chopping knife - CutCo is my absolute favorite knife brand! (not sponsored, they just really work SO well!!)
Cutting board
Countertop garbage can - In recipes like this one where I'm chopping up veggies, I like to have my garbage can right next to me for easy disposal. This garbage can from Amazon is so cute and hides the nasty garbage smell!
Garlic press - A key tool for mincing garlic easily.
How To Make A Ground Beef Taco Skillet Step-By-Step
See the recipe card below for exact measurements.
First, dice the yellow onion and green pepper. Next, drizzle olive or avocado oil to a large skillet over medium high heat. Add the diced veggies, cook until the onion is translucent and the pepper is slightly softened.

After that, mince the garlic into the pan. Stir and cook until the garlic is fragrant (your kitchen will smell amazing).
Once your nose is opened up from the invigorating scent of garlic, add the ground beef, cumin, paprika, salt and pepper to the pan. Mix everything together and cook it until the beef is browned.

Now that the beef is browned, add the black beans, corn, diced tomatoes, and chicken broth. Give everything a good stir and bring it to a low boil before turning the heat down to simmer.

Finally, add the rice, cover and cook until the rice is done, about 10-15 minutes. If you feel the dish is too try, add more chicken broth until the rice is done cooking.

Now, my favorite part-eating this yummy dinner! Top it with some freshly sliced basil leaves, salsa, or a dollop of sour cream and a hearty serving of shredded cheddar cheese. Serve it alongside tortilla chips, tortillas or freshly baked warm naan bread (my go to recipe for naan!)
