Every now and then it's fun to host a special event. Whether it's a baby shower, bridal shower, or just a ladies brunch with some friends, I love setting up a space to host! Choosing the napkins and plates I want to use is so much fun, but my favorite part is definitely picking the menu.
When I think "tea sandwiches," events like these come to mind. Usually I try to pick something that sounds dainty and feminine. Don't these salmon and dill tea sandwiches sound just that way?!
Now, I personally LOVE anything with smoked salmon. As a kid, my family would take summer vacations to Cape May, New Jersey where there was the best bagel shop ever. My sister and I would walk there to indulge in one of their lox bagels and, oh my goodness, it was SO GOOD! I guess you could say that these salmon and dill tea sandwiches are a little twist on those delicious bagels...a bit smaller, too!

Use fresh dill. If you're really in a pinch then I supposed dried dill would work. However, it won't lend the same flavor like fresh dill does!
Add the pickled onions. This recipe includes the option to add in red pickled onions, which you may think is strange. I promise, though, that the pickled flavors marries so well with the cream cheese and dill. You'll love it! Yet if you're truly opposed, simply omit it...though you may regret it.
White bread works best. Our homemade no knead bread recipe works perfectly with these salmon tea sandwiches! Rye could also be a great texture and add more flavor, but white bread is perfectly fluffy without crumbling.
Sourdough isn't the best option. While sourdough is by far my favorite kind of bread, it just doesn't go well with these salmon and dill tea sandwiches. Sadly, there's too many bubbles and it can tend to crumble!
Serve them fresh. To make sure these sandwiches don't get soggy, serve them fresh. The dill and cream cheese filling as well as the pickled onion can definitely be prepped ahead of time. Wait to assemble the sandwiches until you're ready to eat, though.
Freeze the crust and extra pieces. In order to make perfect squares out of the bread you'll need to cut off the crust and some end pieces. Don't worry! These can still be used. How To Make Salmon And Dill Tea Sandwiches Step-By-Step
To begin, mix up the cream cheese and dill mixture. First, finely dice/chop 5-6 sprigs of fresh dill. Mix that together with 1.5 cups of cream cheese. Sprinkle in a dash of high quality salt ( I like Remond Real Salt) and freshly ground black pepper.


Next, cut 8 slices of the homemade no knead bread to make a total of 4 sandwiches. Cut small, even squares out of each slice, taking off the hard crust.
*Tip: Freeze the crust and extra pieces to make breadcrumbs! You can make the best Oven Baked Fried Chicken with them! I've linked a recipe that uses sourdough breadcrumbs, but you can make it the exact same way with no knead bread crumbs!
Spread about a half tablespoon of the cream cheese and dill mixture onto each slice.


On half of the slices, layer 1-2 pieces of smoked salmon and however many pickled onions you desire if you're choosing to add them.
Take the other 4 slices and put them on top of the 4 with salmon to create your sandwiches!

How To Make No Knead Bread
In a large mixing bowl, stir together 2 teaspoon of active dry yeast and 2 cups of warm water. Allow it to sit for 5-10 minutes until it's nice and bubbly.
Add in 4 cups of all purpose flour and 2 and ¼ teaspoon of salt. Mix the ingredients together to form a shaggy dough. Cover the bowl with plastic wrap and let it sit in a warm spot for 2-3 hours or until doubled in size.


Just before your dough is ready to be baked, preheat your oven to 445 degrees Fahrenheit with your dutch oven inside.
Once the dough has double in size, turn it onto a lightly floured surface and shape it into a ball. Do this by first spreading it into a rough rectangle shape. Fold in the long sides and pinch the middle together to create a seam. Then roll the dough from the bottom up to create a ball shape.


Next, create surface tension by pushing the dough ball away from you on a hard surface and then dragging the dough ball back towards you with the inside of your palm. Repeat this 4-5 times for a round, tight dough ball.
Flour the bottom of your dutch oven or put the dough on parchment paper. Bake for 25 minutes with the lid on and then remove the lid to bake for an additional 10 minutes. Let cool completely before slicing.


Quick Pickled Red Onion Recipe
Some of you may be wary to add these pickled onions to salmon and dill tea sandwiches, but I PROMISE they need to be added! Besides, it's a seriously quick and easy recipe! Originally, I found this recipe through Half Baked Harvest. I've since tweaked it slightly to make it the way I love it!
Pickled Red Onions
Pickled red onions are easy to make and taste great on sandwiches, salads, tacos, and more! This recipe is super quick as well.
Ingredients
- 1 thinly sliced red onion
- ½ cup red wine vinegar
- ¼ cup apple cider vinegar
- 1 TBS raw honey
- 1 TBS kosher salt
Instructions
- Thinly slice one red onion and set aside.
- Combine the red wine vinegar, apple cider vinegar, raw honey, and salt in a small saucepan over medium high heat.
- Bring to a boil over high heat, then turn the heat down to low to simmer until the honey and salt are dissolved, only about 1-2 minutes. Remove from heat.
- Fully submerge the red onion into the mixture and allow to sit for at least 20 minutes or until fully cooled off.
- Store the pickled onions and pickling brine in an airtight jar in the fridge for up to a month.
Salmon and Dill Tea Sandwiches
Salmon and dill tea sandwiches make the perfect dainty meal for gatherings such as baby showers and bridal showers!
Ingredients
- 1 loaf of no knead bread or any white bread
- 1 cup cream cheese
- 3 TBS fresh dill finely chopped
- 8 oz smoked salmon
- Pickled red onions (optional)
- Salt and pepper to taste
Instructions
- Begin by cutting 8 slices of bread to make 4 tea sandwiches. Trim the crust off each slice and cut out 6 even squares in each slice. Set aside
- Finely chop 3 TBS of fresh dill and mix together with 1 cup of cream cheese. Sprinkle in a dash of high quality salt and freshly ground black pepper. Give it a stir.
- On all 6 squares of bread, spread roughly ½ TBS of the cream cheese mixture.
- On 4 of the squares layer pickled onions if you're using them and 1-2 pieces of smoked salmon.
- Top off the halves with salmon and pickled onions with the 4 other slices of bread.
- Enjoy!
Notes
- You can prep the cream cheese mixture and pickled onions ahead of time, but wait to assemble these sandwiches until near serving time to prevent sogginess.
- To avoid wasting bread, freeze the crust and end pieces you cut off around the squares to make bread crumbs in the future.
- To serve these sandwiches for a larger crowd, simply double or triple the recipe. Using storebought bread may also save you time and energy.
