Ingredients
- 2 cups coconut milk (or milk of choice)
- 8 tablespoon chia seeds
- 2 teaspoons vanilla extract
- 8 teaspoons honey (or maple syrup)
Instructions
- Add the coconut milk to a large mixing bowl. 2 cups coconut milk
- On top of the coconut milk add the chia seeds, honey and vanilla. 8 tbs chia seeds, 2 teaspoon vanilla, 8 teaspoon honey
- Mix all of the ingredients together until well combined.
- Pour the chia seed pudding mixture into individual mason jars or one large jar. You could also use a bowl.
- Let sit in the fridge for at least 2 hours until set and no longer runny.
- Top with fresh berries, another drizzle of honey, and enjoy!
Notes
- Whole milk will work just as well for this recipe. You may, however, need to add an extra hour or two for the chia seed pudding to set.
- Maple syrup will also work as a sweetener if you prefer not to use honey. Add more or less according to your desired taste.
- Since there's no dairy in this chia pudding, it should last in the fridge for up to 2 weeks.
