Alright guys, I have been keeping a secret for a while now that I'm finally ready to tell... I'm a mom! Not just any mom, but a mom to chickens haha!
So, my husband and I recently invested in chickens a couple months ago. I had them growing up and loved taking care of them and he wanted to know the joy of them as well! We love them so much and definitely recommend them to other people!
However, with 6 chickens comes lots and lots of eggs. Especially for just my husband and I. So, I am always looking for ways to use up the loads of eggs we have sitting on our counter and in the fridge.
Quiche is one of my favorite recipes to make. I like to think of it as my "fridge clean out recipe." You can really add whatever you want into it. I usually look in my fridge and see what I need to use up and add that!
Although, one of my favorite breakfast wraps is a western wrap with green peppers and sausage, so that was the inspiration behind this recipe.

Sausage Quiche Recipe Step-By-Step
Start by making the crust and pressing that into your pie pan. I used the This Hygge Home recipe for an oil based crust!Once the crust is pressed into your pie pan, we're ready to start on the actual quiche part!
For the quiche, start by cooking the sausage or meat of your choice. Once fully cooked, set aside.

Next, dice up the green peppers and onions.
Thirdly, whisk together the milk and the eggs. To get a creamier quiche, blend the eggs and milk in a blender. Season them with salt and pepper. Once whisked, fold in the shredded cheese.

Now that the fillings for the quiche are prepped. It is time to put it all together. Start by pouring your meat, and diced onions and peppers into your crusted pie pan.

Pour the egg and milk mixture over top of the peppers, onions, and sausage.

Bake the quiche for about an hour or until the middle is set. Although to ensure it doesn't get overdone, start checking it around 45 minutes. If you slightly jiggle the quiche, the middle shouldn't be runny when you jiggle it. That's how you know it's done!

Ingredients
- 8 eggs
- 1 cup milk
- 1 ½ cup shredded cheese
- ½ lb. ground sausage
- 1 green pepper
- ½ yellow onion
- ½ teaspoon salt
- Ground pepper
- Fresh parsley
Instructions
- Prepare your pie pan with crust pressed into it.
- Cook the sausage and once fully cooked set aside.
- Dice the onions and peppers. Set aside.
- Whisk together the eggs and milk. Add salt and pepper.
- Pour the sausage, onions, and peppers into the crusted pie pan.
- Pour egg and milk mixture over top of the sausage, onions, and peppers.
- Top with cheese and lightly press it down into the quiche.
- Bake at 350 for 1 hour or until the middle is set.
- Let cool slightly before serving. Enjoy!
