How to Make Bacon Meatloaf Step-by-Step

To start, in a large mixing bowl, add in all of the ingredients - ground beef, eggs, oats, diced onion, and spices. The only thing we aren't adding in right now is the bacon. Mix that well until all ingredients are incorporated into one.

Next, take a baking pan and shape the mixed ingredients into a loaf in that pan. Making sure that it is as even as possible throughout so that it bakes evenly.

Add the slices of bacon longways on the meatloaf. Covering the top and the sides.

Bake at 350 for about an hour or until the internal temperature reaches 160. I would start checking it around 45 minutes. After 45 minutes, check every 10 minutes or so. That way it gets perfectly done and not overdone. Another way to tell it's done is if you stick a thermometer in it and the juices that run out of it are clear and not bloody.

- 2 pounds ground beef
- 2 eggs
- 1 yellow onion, diced
- 5 slices of bacon
- 1 cup oats
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Instructions
- To start, in a large mixing bowl, add in all of the ingredients except this bacon - 2 pounds ground beef, 1 diced yellow onion, 2 eggs, 1 cup oats, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon salt, 1 teaspoon pepper. Mix until fully combined into one.
- In a baking dish, form the meat mixture into a loaf shape. Distributing the meat evenly so it bakes evenly throughout.
- Place the meatloaf in a 350-degree preheated oven and bake for about an hour or until the internal temperature reaches 160 degrees. Check the meatloaf around 45 minutes to see the temperature and from there check every 15 or so. This will keep your meatloaf from getting overdone.

Notes
- To see if your meatloaf is done, you can stick a knife in it and if the juices run clear, you know it is fully cooked through! If the juices are still a bit bloody, it needs some time.
