Gently Fold - Just like any other cookie, we don't want to overmix the batter. When adding in the dry ingredients, gently fold them in with a spatula instead of using your mixture. This will ensure that the dry ingredients get added in just right.
Measuring Flour - When measuring flour, fluff the flour, heap it over the cup, and level off the measuring cup using the back of a knife. This will ensure the flour is measured accurately and your cookies won't come out too dry.
Room Temperature Ingredients - When making these cookies, be sure to use room temperature ingredients. When all the ingredients are at room temperature, they will bond together well instead of having separation and clumping occur.

How to Make Lemon Coconut Cookies Step-by-Step

To start, add in the room temperature butter and granulated sugar into a large mixing bowl. Using a stand mixer or handheld mixer, beat until the butter and sugar and combined together and light and fluffy.

To the fluffy butter and sugar mixture, add in the lemon juice, lemon zest, vanilla extract, and one egg. Using the mixer again, beat in until fully combined and all the ingredients are one.
Next, add in the all-purpose flour, baking soda, and salt. Using a rubber spatula, gently fold in the dry ingredients. Stop when there are no dry streaks noticeable. This will ensure that the mixture will not turn out dry, too fluffy and overmixed.

One the dry ingredients are added in, gently fold in the coconut flakes. The same as the dry ingredients. Gently fold these in until just distributed. Being sure to not overmix the batter.
To a lined baking sheet, add on the cookie dough. I usually do 6 cookies per cookie sheet.

Bake at 350 degrees Fahrenheit for 10 minutes or just until the edges are slightly browned.

Let cool on the cookie sheet for 5 minutes before transferring to a wire rack to finish cooling.
Store these lemon coconut cookies in an airtight container or plastic bag at room temperature.

Instructions
- Preheat your oven to 350 degrees Fahrenheit.
